Ok, so I found a minor bug in iPhoto '11. In the latest iPhoto, you now publish Mobile Me Galleries by clicking on the Share button in the lower right.
When you click on Share -> Mobile Me Galleries you will see your published galleries in the popup window, and you will see whatever thumbnail is set for each like this:
However, yesterday I was having slowness in my library, so I rebuilt it (including thumbnails), using the Option + CMD while I opened iPhoto. Everything else is fine, however, now....the Share -> Mobile Me Galleries popup will not display any thumbnails for old OR new added galleries:
However, if I create a new gallery from another computer or online, I will get the thumbnail.
I tested this for hours this morning with a new iPhoto library. It's definitely something messed up in the library itself as I can reproduce it each time.
So just beware if you use Mobile Me Galleries and need to update your thumbnails.......you likely won't see thumbs in the popup anymore.
I did submit a bug report to Apple. I'm sure they are adding it to MANY others for this half baked release!
