Hello.

So my Macbook Pro had to get the hard drive replaced and I didn't have the LATEST backup of my photos, so I imported all my media into my phone. Now, on my new hard drive, I want to get the photos off, but iPhoto is only showing the "Camera Roll", not the other folders.

How can I resolve this?
 
Even if you are able to copy the pictures back off the phone, I believe you have lost resolution since the pictures are optimized for the iPhone screen.
 
Try using the imagecapture.app in your Applications folder and just import to a folder.

*Edit - Sorry, re-read your post. In my understanding, the phone doesn't back up any photos besides the ones in the camera roll.
 
UPDATE:

Called AppleCare, and the mac guy didn't know anything so he transferred me to an iPhone representative. It was a lady, and she felt really bad and talked to me very depressed on how I wasn't able to retrieve the photos. It's okay, I have a backup though, but some of the edited ones in the past week won't be edited..
