When I change photos to, oh, say black and white in iPhoto, I'd like it to keep a copy of the original right next to the modified one in that library. Anyway to set this up?

Duplicate that photo before turning it into black and white. If you are viewing your picture in an album, then the duplicate should be placed in the same album.
