iPod Ipod+Itunes Problem

i had to replace my imac G5's hard drive so we bought an external case to put the original in it and use that to back every up. But my problem is that all my itunes music isn't backed up the exact way that was displayed on the original hard drive. I wanted it to be sorted by 'date added' but when i put my songs on the new hard drive the date added is today's date not when i purchased it. Can i use the ipod as a back-up and transfer all of my music from it unto the new hard drive?
