When I go to my iPod in iTunes there are four or five options on top:

Summary, Music, Books, Podcasts, Photos

I go into music and there is a checkbox that says "Sync Music." I've been trying to uncheck that box but haven't been successful. If I uncheck the box it says that the music on my iPod will be deleted, I say OK. Then, I manually add some songs to the iPod. Once again, it automatically reverts back to the "Sync" option. How do I get out of it?

I want to be able to manually add / delete / edit info for the songs on my iPod. This is how it works with any other iPod I've ever used (because I've never been interested in the sync feature).
 
Make sure 'Manually Manage Music and Videos' is checked under Summary. That's the only thing I can think of that would cause that.
 
Stupid question, but have you ever pressed Apply after un-ticking the box?

This. If you can't see the option on your summary page, you'll need to scroll down to see it. It may be that your iTunes window is too small to see that option.
