Do you need to use iTunes to add music to an iPod, or can you just drag mp3 files to one?

I am thinking about getting an iPod (not sure which one and I have never owned one) to use in the car. I am running XP64 and iTunes doesn't work correctly on it. For example, you can't rip CD's on 64bit XP using iTunes.
