With your iPod plugged in, open iTunes and click on the little button in the bottom right corner of the iTunes window with a picture of an iPod on it, there is where the option is :)

When you connect your iPod to the computer there should be a button on iTunes for the iPod preferences. The option to turn on automatic update should be in there.
