1. Upgrade to today's 4.1.
2. From Safari, visit http://goo.gl/PoaG (link goes to to Apple's iOS 4.1 iPod touch manual).
3. After the PDF loads, tap "Open in iBooks". Wait.
4. Watch your iPod reboot.

Can anyone confirm on an iPod Touch 2nd Gen? my iPhone 4 doesn't do this. Must be an out of memory condition, but instead of an app quit it reboots the whole damn thing.
 
I just tried this after reading your post and, yes, after a minute or so of being completely frozen my Touch reboots itself after doing this.
