is it possible in any way to use the ipod touch as JUST a USB device
OR,
is it possible i can use the ipod touch also as a usb device (viewable in Finder)

As far as I know, this is not possible without jailbreaking it. But do not ask me how to do it after jb, I have no experience with it.

It's possible if you jailbreak. There is an app in Cydia called "USB Drive" that can do what you want. You need to add source "apt.dmytro.me" first, though. You can visit the author's website: dmytro.me

Once installed, you have to allocate how much space to the USB drive. Also, you need to switch USB modes to choose from iTunes mode or USB Drive mode, or some kind of hybrid if I remember correctly. I haven't used it in a while and it appears it hasn't been updated in a while either, but should work in 3.x which is what you're stuck with on your 1st gen.
