I am giving my old iPhone 3G to my girlfriend to be used as a iPod Touch. Currently I restored it, put airplane mode on, and activated the WiFi and GPS radios. I left the SIM card in, because I don't need it.

My question is, I'd really like to install the firmware from a iPod Touch on there, but iTunes won't let me. Does anyone know how I can do that?

It's not possible. Each firmware is for a specific device. (iPod, or version of iPhone.)
 
Why would you? Just take the sim card out and it is a iPod Touch

I don't believe the Touch firmware works on iPhone either.
