iPod Touch for an old man with not-too-good eyesight? As opposed to, say, an iPod Classic? Like, for listening to music, are the fonts nice and big and is the UI easy to use for an old guy with not very good sight? And can the fonts be changed?

Eye sight can be relative. The best thing to do is go to a store (apple, best buy, etc) and demo the touch. Unless you have a huge number of songs (e.g. thousands), I'd prefer the touch over the classic as you can do more with the touch. By the way, I'd wait for the touch 5g to be released as it should be out within a month or two...hopefully.
