Hey.
Recently I updated my 4th Gen Touch to 4.2.1 and Jailbroke it.
Now, I'm stuck on the Apple screen, with no combination of button pressing or holding working.
Also, my iTunes is not recognising it.
Is this something that can be fixed or will I have to send it into Apple?

You should try restarting it. And if you send it back to Apple they will tell you tough luck, you jailbroke it so its out of warranty....GL!
 
Keep it in recovery mode
and it will work, it happened to me too
i don't have the handly link for recovery mode, plug into itunes and bring into recovery mode than later you can restore it to original settings, hope it helps
 
Had same issue. I got into recovery mode by holding the home button while my ipod was turned off and redsn0w with the option "boot tethered now" open and telling you how to get into DFU mode and that fixed it.
