I know the effective resolution at 2x scaling is an abysmal 1280x720 but still, would text be clear without subpixel antialiasing?

Wanted a higher resolution but my mac doesn't support DSC or arbitrary EDID tile displays.
 
It's a very subjective call. To me, QHD is plenty acceptable, and if you are increasing the size of text I think you will be really happy. It is not as crisp as 4K, but I consider it plenty good when you reenable font smoothing, especially when you adjust the settings a bit. I do feel like QHD looks better on a 24-25 inch screen for a bit higher pixel density. Compared to 1080p, QHD is a significant improvement. And, at least in my opinion, the improvement in terms of how text looks is a bigger one between 1080p and QHD than it is QHD and 4K (that is just my take when I am running a 1080p, QHD, and 4K UHD display simultaneously). That said, 4K shines especially brightly when you are looking at extremely small text.

It's definitely worth getting the display from a maker or a seller that offers free returns though, as while I like it, I know some folks who say it is completely unacceptable.
 
The specific scenario the OP mentions will have text detail looking great, the glyphs will just physically be comedically large
