how thick are the screens?

just the screen, not the whole depth including base.
 
Just the screen is about an inch thick at the top and bottom. They are fantastic, I got my 24" a few weeks ago, and for $450 (bought here on MR) the price cannot be beat.

Grimace: any issues with the sound on the 27? I've only read the long threads of sound woes on this forum and apples... Not hearing (obviously) from anyone who is not.

I picked one up this weekend (upgrading from a near 6-year old aluminum 23" HD Cinema Display) and I can identify no issues with the sound. I was also allowed to take the panel from the box and test it with one of the Mac Minis on display to ensure there was no yellow staining or dead pixels. I'm also not expecting Apple to discount these tomorrow or Friday.

Sound? Perfectly fine for a 2.1 system built into a display. I'm enjoying no longer having to wear a pair of Sony studio monitors all the time, or dealing with the Mid-2010 Mini's onboard speaker being drastically improved, but still not near good enough to rely on all the time.

Looking forward to a 27" Sandy Bridge iMac down the line, arm mounting both of these (the 27" CD stands 0.9" shorter than the iMac, so they don't line up), and enjoying 5120x1440.

Power consumption is also fantastic. I have the brightness at 13/16, and the power draw is only about 27 watts, and is FAR brighter than my old 23" aluminum ACD. I think at 16/16 it's closer to a 70W observed draw though. Right now the display, Mid-2010 Mac Mini and an external FW800 2TB disk is eating a combined 74W.
