My perfect scenario is to set up one of the disks to be an iTunes server and general file storage for photos (managing with iPhoto) and documents, then to set the second disk as a backup (versus RAID1) to the first disk. Is this possible. If I can only set it as RAID1 and not a back-up, can it be backed-up to Time Capsule using Time Machine? The answers to these specifics haven't been clear to me through a Google search.

Just be aware that the Synology is not actually doing anything other than storing your iTunes media.
Their wording as an iTunes server is and isn't accurate, say you wanted to play media on an AppleTV from the Synology, you will still have to have iTunes actively up and running on an actual computer to do that.
