Is any headset with a mic compatible with MBPs or is it restricted to Apple only ones?

Anything that you can plug into the audio jack will basically work, but whether or not the specific product has software, drivers or what have you that are Mac supported is something that you will have to look into.

I successfully use this adapter with an Altec Lansing headset on a MacBook Pro.

So, I would think that nearly any standard headset/mic should work with an adapter.
