First of all, I'm pretty sure those default signatures never mention the model. It's just "Sent from my iPhone" or "Sent from my iPad" Not "Sent from my iPad 2" or "Sent from my iPhone 4" or anything of the sort.

One of the only reasons I can think of for changing the signature to "Sent from my New iPad" is either to let all your friends know that you have the nice new iPad, thus making you feel a little better about yourself (whether it's a big feeling of accomplishment or just a little one). Or you're just taking a stab at the whole "the iPad 3 is named 'New iPad???'" joke. But that seems a little unlikely.

I'm not judging anyone here. I'm just sharing my thoughts, seeing as you're open to them.

I don't mean to impose or anything, but when if I had gotten the new one, I might have had to decide if I wanted to change it from just iPad to New iPad. But I guess maybe that would sound weird.

I don't mind when it says in emails 'from iPad or iPhone' I think rather fondly of it. It's nice to know.

Why would you? What's the reason other than to show off?

My email signature says "sent from my mobile" -- thats all the recipient needs to know, as it establishes I might type a more brusque / compact message than I would on a full computer.
 
My devices, ipad and phone, simply says 'sent from my mobile'. Simple and not pretentious. Conveys that im mobile, and using a tiny touch screen keyboard.
 
What reason would I change it? Um... I don't know, it's just a thought, I guess it makes it seem more updated? It looked nice written on the price tags. Something about 'NEW IPAD' just feels right.

i delete those signatures. they are tacky

I agree, and usually I will delete the signature. However, sometimes I keep it as a way of 'explaining' why my email is shorter and more abbreviated than it otherwise would be.
 
Oh no, I already got 7 negatives. I only meant for to be a small thread.
 
I just use:

"This short message composed on a mobile device."

when I am sending from iPhone/iPad.
