Compatibility specs are fine but don't really answer the OP's question if "anyone is successfully running an Intel Mac Mini with an Apple Studio Display." It may be fine, but IMO it's not unreasonable to want to hear some actual user feedback before spending that kind of money. And the UHD 630 is not known to be a powerhouse, so it might struggle if you want to use a scaled resolution.

Whilst waiting for my Mac Studio to be made / be delivered I am running a 2018 Mini with 32GB RAM and the Studio Display as my daily driver. Pleasantly surprised by how well it runs. It’s not exactly fluid and smooth at all times, but it does get the job done and is a real trooper.

I originally had 16GB and things were rough - YouTube in full screen struggled for example for whatever reason. With 32GB it can now play 4K YouTube in full-screen with no problem.
