I am unable to log into iCloud on my new XS and I have to restore from the last iCloud backup I did before I set up the new phone last Friday morning. Does that mean I lose any Apple Watch activity data from the last 3 days or will it automatically sync over once my new phone is restored and I’m logged back in to iCloud? I had Health toggle set to green/on in iCloud settings.
 
Already answered that in your thread from yesterday.

iTunes encrypted back contains all health/fitness data.
iCloud backup doesn't. You MUST have on iCloud sync.

It (iCloud Backup) doesn’t include information already stored in iCloud, like Contacts, Calendars, Bookmarks, Mail, Notes, Voice Memos3, shared photos, iCloud Photos, Health data, and files you store in iCloud Drive.
