is it still 30 minutes for a professional sportsman that s wearing the Apple Watch for 2 years ?
why doent it goes up as red move ring?

On the latest version of WatchOS you can change the values for all 3 rings if you want/need to.

Adding onto this, if you do want to change your exercise goal just go into the Activity app on your watch, scroll down until you see "Change Goals" and click on it. Then you'll be able to change your move, exercise, and stand rings to a goal that suits your needs better.

I lowered stand to 10 from 12.

it s not easy to complete 12 for me. because I don't wear Apple Watch when I m at home

Have they finally fixed it where you can simply 'maintain current weight' like the Galaxy Watch has done for years? Because one of the most annoying things was its incessent nature of assuming I want to become a triathlete or a body builder!
