I have an SSD drive showing up with Mount Point: / rather than what the other ones show up as, Mount Point: Volumes/DriveName. This SSD isn't booting without option key booting into it. Wondering if this root mount point is an indicator of something?

Your boot drive always mounts at the root, and you can't mount another drive there.

If you're still having the booting issue, make sure the drive is selected in Startup Disk preferences. If it's not, that can lead to problems like a longer boot time while it looks for the OS, or even a flashing folder icon for a few seconds.
