... I'd like to go into a store, trade in my 6 at the store and walk away with a 7 SS Graphite. I'd prefer not to mail in my 6, get a gift card, then buy the watch. Just wondering, in the past, has the SS models been readily available in the store? I am coming from all aluminum models.
 
There have been several available at my local apple stores -in st. louis. I just started checking about 9:00 and then a couple of times throughout the day. They had graphite and gold in 45 and several in 41 . The silver is hard to find around here it seems
 
I wonder if you build or pick a certain SS model and band... if it will stay out of stock if the watch is in stock, but the band you chose is not...?

Yes it happens. Choosing a sport band is a viable alternative.
 
They’re usually a tiny bit harder to find, but not this bad. At least you can buy them at any apple store. The titanium is only at a very small number of stores. That’s what I came close to doing, but it seems extremely hard to find.

You should be able to find a steel one if you keep checking store inventory each morning.
 
After the first few days, the 45mm SS watches have more or less dried up. There are some 41mmm SS watches available in limited numbers and a limited number of configurations. The supply chain issues are real. Cook said yesterday that supply chain problems had cost Apple $6 billion during the last three months.
