Wanting to max out the ram on my sister's MBP, but she has the model that only supports RAM up to ~ 3.2gb or so.

Is it OK to have one slot with a 1gb stick and put a newer 2gb stick in the other, or would I need to upgrade with matching 2gb sticks?
 
Yes. Adding as much RAM as the machine will accept will give much better performance and is worth the minor performance hit that mismatched memory can cause in some machines.

Just get two 2gb sticks.. only 3.2 will be readable but you will get the added benefits of dual channel.
