I haven't done a local backup on my new computer yet. I did do backups and had it sync every now and then with my old computer.

I'm having my iPhone replaced by Apple and want to do a restore from my computer once I get the new phone.

Funny question but - is it OK that I've never done a backup of my iPhone on my new computer before but do one now and then restore from it once I get the new iPhone?

Will all of my contacts, notes, etc. be restored?

It should work fine. Just be sure to do an itunes back up and encript it so all your stuff will still sync. It may take some time if you tell it to dl your apps. I do. And i back it up again when through just to be sure.
