i got a macbookpro from early 2008.

can i connect a xbox 360 and play it on my macbook pro?

if so what cable/program would i need?

would the graphics still be nice and crisp like the normal screen of a macbook pro?

MacBook Pro has no video input so unfortunately that is not possible. There was an EyeTV product that makes it possible but it has been discontinued and it was limited to 480p and there was a noticeable lag

The short answer is no.

The longer answer is that since the MBP has no video input, you need a separate device to input video to it. Some TV tuners can do it, but there is noticeable lag as well as poor video quality. Two things you don't want when gaming.
