Is it possible to exceed the suggested max of 4GB for my MacBook Pro

I have a Late 2008 15 inch Macbook Pro. According to http://support.apple.com/kb/HT1270?viewlocale=en_US#link4 the maximum is 4GB, but is that because it was written when they were using a 32 bit OS?

It's possibly to go higher on that model. Probably 8 GB, I'd guess.

According to Mactracker, the maximum for the 15" Late 2008 MBP, is 8GB.

Yes it is. But some updates to OS are required.

I have always used and found this site to be accurate.. Find your exact computer, and I believe it will tell you 'the real deal'..

Takes up to 8GB with all the latest updates. I have 8GB in mine with no issues.
