According to a couple of posts it is possible to use one of these monsters in a Mac Pro 5,1, but in the same manner as an unflashed Polaris/4xx/5xx series card. In other words, no native boot screen.

Do these cards have encrypted BIOS? Is it possible to reflash them to have a native boot screen when booting on a Mac?

Use OpenCore and get it working via OpenCore GOP support. AFAIK, no one ever developed a firmware for a R9 Fury card, but you can confirm with MacVidCards Europe.
