I guess my question is has anyone attempted or tried say put 2 graphics cards in the mac pro and install osx on one separate hdd and vista on a separate hdd of its own and simultaneously run both os on each of the monitors. Wouldnt that be cool?

At least as it stands now, it could never work. Both OSes would be trying to control all the same hardware like the motherboard, RAM, processors, etc.

It's not just a graphics card issue, OSes control interaction with low level hardware. Without a machine designed with low-level hardware virtualization, you cannot run two operating systems at once.

As opposed to - oh I dunno, having a PC and a Mac?
 
this is not possible on any consumer level computer.

it's much like saying "can i get in my car and drive to boston AND new york at the same time?"
