Hello! I used to use Ubuntu way back with release 12 and I honestly loved using it. I’m wondering if there’s a way that it can be ran from a thumbdrive connected to a MacBook Pro but without installing or any complex steps to make it run? Also, I’m open to trying Mint if this is possible, as well. Thank you, in advance!

You can run Ubuntu in a virtual machine using UTM or VMware Fusion Pro on your M1 MacBook Pro.

True. But not from thumb drive… unless you consider saving VM disk/files on the thumb drive “running from” the thumb drive. I interpreted post to be asking about booting Linux from thumb drive.
