Hi.

Im just wondering. Is it possible to erase all unnececary programs on my iMac and start all over? I would really appreciate some answers.

Yeah, you can erase and reinstall the OS on your mac. If you just want to get rid of unused programs, you can just trash them and look for their preference files. There are a lot of apps out there that can do this for you.
 
Sure

Boot from the DVD that came with your computer
Run Disk Utility and erase your HD
Reinstall Leopard
Reboot

Done

Of course you will lose EVERYTHING

Or, you can just delete the Apps you don't want

Or, you can do an Archive and Install to just "refresh" the OS and leave your data
