you are anon from the source, but your web proxy will see everything going through their pipe (unless its encrypted, like if you accessed something via https).

I see, so if I'm on a proxy and it starts https I should be ok in that nothing will be trackable? (without asking the web proxy)

well, they will know the website/address your accessing because they have to fetch it for you; but with an encrypted connection they wouldn't know WHAT you are trading, just who with.

Ok so basically it's just they know what proxy I'm accessing but not what I'm doing with it-if its encrypted (downloading files ect.). Thanks.

Unless they decide they really want to know then they could crack the encryption. This is unlikely unless they're asked to do so by law enforcement though.
 
You don't necessarily need to crack the encryption, ettercap can sniff https connections and see all the data.
