on my Mac I had to install 11.1 beta of iTunes. It wouldn't let me restore my iPhone 5 to GM otherwise.

Don't think there's a GM, just a final when it's ready.

No. Beta 2 works just fine with iOS 7 GM.

I suspect they will release the final version soon.
