My brand new MacBook Pro has a weird graphical glitch when going into full screen mode in iTunes. Along the right hand side as it's going to full screen, it has a scrambled line of white/pixeled areas that expand with the screen. Once it's full screen, everything is good.

I ran a hardware test and have tried out some games to push the GPU a bit, but haven't really noticed anything weird outside of iTunes... except when I was running Parallels and had the memory about maxed out.

Anyone else notice anything like this?

By full screen, do you mean like full screen visualizer? It's quite possible that iTunes is making your MBP switch from integrated to discrete graphics. I notice a slight graphic glitch during the switch sometimes, especially when I'm starting up Starcraft 2.

That is normal, my MBP does the same thing. I was wondering about the same thing, so I tried the MBPs at the Apple Store, they all did that too. Don't worry.
