I saw the article said Retina MBP is not upgradable? Is anyone getting a non-retina MBP? Can I get the low end configuration, and upgrade the memory and SSD by myself?

I am not a geek. Can anyone give a one stop recommendation for the memory and SSD? Which had balance the performance and $$$.

Memory is NOT upgradeable. However the SSD/Flash Storage on the Retina is upgradeable from 512/G or 768/G.

The best way is to get the 16GB of Ram just future proof it since you can not upgrade it if you decide later down the road.

Yes, in the non-retina MacBook Pro you can easily upgrade both the memory and hard drive. I usually go with Crucial to buy my memory and SSD. They have very reliable products at a good price. I'll be getting the base 15" Pro in a week or two and upgrading the RAM to 8GB as well as replacing the hard drive with a 128GB SSD. Both from Crucial.
