Well my question is stated above and it might have sounded stupid.
I think it might since it plays videos off you your iTunes that are in Quicktime/iPod format.

So for example, if I went to the Apple site and wanted to watch the TV Ads, would I be able to?

I just went to the Apple Ads page and clicked a QuickTime movie and it brought up a window like when you watch videos on your iPhone and then it said "this movie format is not supported"... and since the iPod Touch is very similar I would say nope you wouldn't be able to, sorry.

It was worth thinking about and cool if was actually there.
