My son got one for Christmas, regretting it now. Had it all nicely set up, few hours later an update appears and has no spsce, had to unpair reset to install
 
Maybe the key is just to not load as much content on it for the problem to go away permanently.

Unfortunately, that’s not a solution!
My S3, used only for sleep tracking, has 1 watch face and minimum apps installed. It still reports “insufficient storage “ ....

Sorry to hear, it was just a spontaneous idea that came to mind.
 
I managed to install 7.2 at the second attempt by initiating directly on the watch itself.
I’ve more or less decided it will stay with watch OS 7 unless something really important comes in 8.
It seems to be the major updates that are most problematic.
 
The series 3 will probably keep having that problem, as you have to wipe the watch each update. A real pain in the butt. I used one for sleep tracking and finally got tired of what you described OP. Otherwise, I would have kept it for backup.

I would return it if possible and consider a series 4 for him.

This is a known issue with the S3. Even if you don’t put any apps, photos, or music on it, it will not have enough space for updates. For some reason there’s something that slowly eats up the storage and it isn’t reported in the usage report. I finally got tired of that nonsense and upgraded to the S6.
