What do I have to do to stay safe on the iOS version. Can people find my location?
 
About the most they could do would be to track your IP address but I don’t think that is even possible with Skype - I think it’s all done over SSL.

Could you explain that? Is that the thing where it gets redirected through different nodes?
 
I think Skype is scure, but I have only used it in Android, I don't know if is the same thing, its likely
