Will the new macbook air 11 inch with a 1.4 ghz processor be able to handle itunes hd video as well as safari and other apps open without problem.

Yes. Apple is not going to make a laptop that isn't compatible with iTunes. Just because it's 11" doesn't mean it can't do stuff, we went to the moon with a computer much less powerful than the MBA.
 
I wonder if it will play HD flash, which requires more than standalone video. For example, Hulu shows in HD which many netbooks seem to choke on.

And if it can handle all that, how long can you watch before it sounds like the space shuttle lifting off?

I am not to sure about OSX, but my Vaio TT which has the same cpu, but lower intel 4500hd gpu. It even runs 1080 youtube files hooked up via hdmi no problem at all.
