Like the title says. Does anyone know?

The SIMs in the iPhone 6 have the blue ribbon like this.

But NFC SIMs should be gray like in this diagram.

When I transferred my SIM from my 5s to the 6, I got a text message saying I needed to replace the SIM to activate "all features." I was already getting LTE, so perhaps it has something to do with this.

Yes I got the same message. Tech Support said it might be related to NFC as well.
 
The iPhone isn't like Android phones. On the iPhone, the SIM has nothing to do with NFC.

If you're talking about Google Wallet, it doesn't need a special SIM either. It originally used an embedded Secure Element (SE) just like Apple Pay does. Now it needs neither.(*)

As for other wallet apps like Isis (now Softcard) or non-US wallets, they do often come on NFC SIMs (that is, SIMs with a Secure Element). But that's true for all phones at this point.

(*) Well, except that Google Wallet currently only allows payments if you have a U.S. SIM, same as Apple Pay for now.
