Is the entire camera roll on the 4S backed up by icloud? How long does pics/videos stay backed up in camera roll?

Are you talking about the camera roll being backed up by iCloud or iTunes, or Photo Stream?

Yes, your Camera Roll is backed up to iCloud and/or iTunes when creating a backup. (The trick is actually getting all of them back when restoring from iCloud. I've read many users that haven't gotten them back, or just some not all.)

Photo Stream only stores the most recent 1,000 and for only 30 days. It's more of a temp backup so you can get images back if they were accidentally deleted.
