It has always been a frustration to me in the Messages app that it doesn't really seem to know about my different SIMs. No indicator of which lines messages are coming from, no way to select which SIM to send messages from. Hopefully adding a Phone app has forced Apple to rethink this and not only provide this functionality in the new Phone app but bring it to Messages now as well. Could anyone running the macOS beta with a dual SIM iPhone speak to this?

The Phone app doesn't appear to be aware of multiple SIMs. If you try to start a new call, there is no option to select the line.

This is incorrect. If you bring up the dialpad, there is a place to select the line near the top left corner:

This already happens on iOS 18. Everywhere a message or call is shown, it shows at least an icon of which line was used.

Yes, in iOS it’s fine but the continuity features for messaging and calls on macOS (and iPadOS) don’t seem to have any awareness of dual SIM.
