I noticed I can get the refurb Apple display for $799. Is there any physical difference vs buying it new? Will the case/glass etc have any wear and tear or will the display quality be less? Thanks

Nope
Should be the same as brand new.
Apple can't sell returns as new, so must be sold as a refurb.
Yours could be a simple return (no reason is needed in the first 14 days), or a remanufactured one, or simply tested, then sold as a refurb.
Warranty is the same, and if you are not happy for some reason, you can also simply return it, or get it swapped out/repaired, whichever is Apple's choice.

Should be impossible to tell the difference between an Apple refurbished and a new display plus same warranty and ability to get 3 year AppleCare applies. The only difference is refurbished items come in a plain white or brown box instead of the full color white retail one.
