Is there a big difference in speed between the 256 and 512 GB ssd?

I don't think there is noticeable difference in speed.

I also got the 256GB 6-core. I was thinking of trying to find a way to buy one of the SSDs that the new MacBook Pros 13" are coming with. The 1TB of that is supposed to be faster than the one in the Mac Pro even! Anybody know how I can get one other than buying a MBP and taking it out?

Put your money on buying more RAM.

The difference in speed between any pair of SSDs compared to having the data cached in RAM is miniscule.
