Im not interested in using LTE but was wondering if the GPS and GPS+LTE models differ hardware wise?

If I am understanding you correctly, the hardware is exactly the same internally and externally aside from not Having a Cellular radio. Which applies to the aluminum and Stainless models Series 3.

Nope

Lte has more storrage (double)
And the rear is made from a more durable material (ceramic vs composite)

Correction on your Post. Series 3 is offered in two configurations, both as the OP listed with and without. The stainless has a Ceramic backing. The aluminum Sport has a composite backing.

I’ve seen reports that even the sport, if it’s LTE, gets the ceramic back.
 
Thanks for the replies. I’m not interested in having LTE as my carrier doesn’t currently support and I don’t feel the need for it.
Looks like the GPS variant will be fine.
Just need to decide which colour now lol. Especially when it comes to scratching

All LTE Watches have Ceramic Back.

Stainless steel and Ceramic Cases have a Sapphire crystal screen while other LTE's Aluminum Cases get Ion-X glass.

Silver then.
The other colors are anodized. And since it's aluminum (soft), potential scratches/ gouges will show up silver.

The 7000 series aluminum actually is not soft at all. It's some of the highest strength aluminum alloy on the market and holds well against scratches and dings. It's the same 7000 aluminum used on Apples current iPhone models starting with the 6S and up.

I think silver would be a good color, it's much easier to pair bands with over the space gray.
