Is there a guide here showing how to make an original iPhone into a Touch?

I am having a heck of a time figuring out how to get this original iphone setup for my 4 year old as a ipod touch. Long story short, upgraded to the 4S and decided to give me kid this as an ipod touch. Stupidly (now looking back) I did a "restore" thinking it would just wipe my info and start from scratch. Problem is now I can't get past the itunes screen and when I plug into itunes I just get a white screen with the word iphone across the middle.

All I want is to is make this 4 year old original iphone an ipod touch and am stuck.

Somebody suggested I get a new SIM card from the ATT and that would work. No dice.

So, is there a guide anybody has posted that will allow me to do what I am after?

Thanks Carl. A local friend of mine just emailed me the same rec. He jailbroke all of his iphones over the years so I am going to have him do it. I wouldn't have a clue what all is entailed.
