I had no idea these even existed ...

Are they any good? Does one stand out in particular? Any downsides to using them?

Eh, I guess I should have clarified. Is there a App that lets you speak and than send a text message?
 
Dragon really is the way to go and is free (currently)!

gone are they days where you would install a huge program, spend ages training it and then spend more time correcting the text than it would have taken to type it.

this app works surprisingly accuretly even with some bizarre words and even in quite a noisy place. how they squeeze this into a program this small is amazing.

as the other poster said, you can then SMS or mail the resulting text.
 
You might want to check out Vlingo as really makes talking to your iPhone a lot easier, especially when it comes to sending messages to people.
