Going from a 12" laptop to a 4K iMac has included being assaulted by bright (LED?) light; with Dark modes selected wherever available and the brightness at one above the minimum its generally acceptable but it seems obvious to me that white fonts should never be standard and nor should there be white light on menus, icons; PDF's, online Manuals etc. With Windows 10 "personalisation" it allows for a few more (eye health) friendly options. My iMac screen was flickering recently and a check on YouTube revealed a solution by a Mac laptop user - to turn on colour filters; I turned OFF those filters and the flickering stopped and the non "filtered" colours were better i.e. this font is a very light yellow on my black background screen. Something weird occurs with the iMac almost every day and regular Apple OS users have advised that the continual dysfunction I experience is not an Apple norm - either way I may soon make an eighth or so attempt at downloading an alternative OS and since there are so many Linux options I thought I'd ask the subject question.

The great thing about Linux is that you're free to make any such changes. I would say the odds of someone making a distro with that rather specific and niche feature is probably between zero and none, but with a little leg work, you should be able to change the Desktop Environment to what you want.
