I am still deciding whether I should get a 256gb ssd with 16gb ram or 512gb ssd with 8gb ram (they are both equally priced - both 13" retina).

Is there a lot of speed difference between 256gb macbook pros and 512gb macbook pros?
Also, can a normal university student (not doing any photoshops, etc) ever exceed that 8gb ram? I play LoL quite often

Nope, both my iMacs (21.5 with 256GB SM0256F SSD and 27" with 512GB SM0512F SSDs) have the same speeds.

The SanDisk ones (SD0256F) are about 150MB/s slower in writes than the Samsung ones.

128GB is definitely SanDisk, 256GB can be either SanDisk or Samsung, 512GB and 1TB are definitely Samsungs.
