I want to be able to capture video from an HDMI-to-USB dongle with stereo audio. QuickTime Player works, but it only records the audio in mono and there is no option to select whether the incoming audio should be mono or stereo.

Is there an alternative app I can use that will allow stereo audio?

I've tried the capture option in Premiere Pro, but it doesn't see the video from the dongle and the only capture options it offers anyway are DV and HDV (QT Player captures in full 1080p ProRes 422).
 
It is a bit more effort to setup, but my goto when I need more advanced recording is OBS. It recognizes most capture devices, plenty of audio/video controls and flexibility. And it is Free... You're limited to software h.264 encoding, though I'm not even sure if QuickTime uses hardware acceleration when recording video input...

I agree the free OBS might be worth trying.

Incidentally, QuickTime Player should record stereo audio (I know it does from certain audio sources, at least). That might be a cue to make sure you've confirmed QuickTime Player is the actual culprit.
