is there a way for siri to send an email with NOTHING in the body, only the subject?

Yea- this is a very strange question. Why couldn't you just send an email with something in the body and not in the subject?

here's an example: I use omnifocus, and have it set up that if I email a certain email address with something in the subject, that gets added to omnifocus -- the body of the email doesn't matter

Although not a solution maybe you could put something like a space or period in the body?
